DO I NEED TO RUN BENCH TRIALS BEFORE I USE A FINING AGENT?

Bench trials are essential to determine proper dosage and type of fining and so highly recommended. Each fining product works under a different mechanism and will react to each wine differently. Bench trials and cellar additions should be prepared and used the same way. If bench trials are not performed, the winemaker may risk under or over-fining and could harm the wine.

WHAT IS ISINGLASS?

Isinglass (Colle de Poisson L.A) is made from the fish bladders. It is a great fining agent for whites and roses to enhance clarity and brilliance. It also improve clarification, and remove harsh tannins.
