Sorting is the quality-control step where winemakers decide exactly what enters the fermenter or press. Depending on the vintage and fruit condition, you may need simple hand sorting, vibrating pre-sorting, air separation, density separation, or high-precision optical selection. The Delta sorting range supports both boutique and high-throughput wineries, with solutions that install before or after destemming.
