An ebulliometer will provide one of the easiest, fastest, and most accurate methods of determining the alcohol content in dry wines. Developed around 1870, continuously improved and recognized throughout the world, the Ebulliometer is the simplest instrument for directly and accurately testing the alcoholic content of dry wines with normal composition.

Enzymatic and colorimetric analysis by photometry - DS 197400
The Oenophoto makes possible fast and reliable analysis by the winemaker himself, for common parameters such as residual sugars, yeast assimilable nitrogen, malic acid, etc. Completed with common accessories at the laboratory and colorimetric & enzymatic kits, it allows the wineries to run their own analysis.
Principle:
A photometer or spectrophotomer is an instrument that permits the measurement of how much a solution absorbs over a certain range of wavelength. A part of the light that passes through the sample solution is absorbed by the chemical molecules of the sample, and is this amount of light absorbed that the instrument measures. For the analyses in oenology, we compare the reaction produced by an enzymatic or colorimetric reagent in a white (water), a standard solution, and a sample in order to determine the concentration of the required parameter in the sample. Indeed, this reaction causes a change of absorbance, proportional to the concentration of the parameter (Beer-Lambert law). The absorbance of the sample is measured by photometry over a certain range of wavelength.

Titration is one the most essential methods of analysis of musts and wines during fermentation and ageing process. TITRA EVO automates this method to reduce the time spent per sample and to improve the accuracy of the results.
IODOMETRIC DETERMINATION OF SO2
With a double platinum electrode that detects an electric current in the sample, the instruments perform the titration and stops automatically when the oxydizing solution is in excess. The device calculates the result depending on the selected program (free or total SO2) and displays it directly after a few seconds.
DETERMINATION OF PH AND ACIDITY
This device allows to determine pH, total acidity directly in the sample, and volatile acidity after extraction, without any need to see a color change at the end of titration. This enables optimum accuracy and reproducibility of the results.

Dissolved CO2 MEASUREMENT
Our high quality Dujardin-Salleron Carbodoseur is a valuable laboratory instrument for fast and easy analysis of dissolved carbon dioxide in wine.
Simply fill the unit with wine to the measured volume, record the temperature, cap, shake and record the volume of wine dispelled. Using the correlation chart provided, the concentration of carbon dioxide can be directly determined in g/L.
