Questions about malolactic bacteria.

  • Malolactic fermentation is the bacterial conversion of sharp malic acid into softer lactic acid. It reduces acidity, adds complexity, and improves microbial stability, making it essential for most red wines and many whites.

  • Co-inoculation means adding MLF bacteria at the same time as, or shortly after, yeast inoculation rather than waiting for alcoholic fermentation to finish. The benefits are shorter overall timelines, reduced SO₂ needs, and less stress on the bacteria.

  • Bacteria XTREM is selected for resistance to challenging conditions such as high alcohol and low pH, and it can be directly inoculated.
