Excellence® Celsius is a yeast strain selected for its ability to reduce alcohol levels and increase acidity in wine, enhancing overall balance and harmony.
It is particularly effective in achieving lower fermentation yields (alcohol produced per gram of sugar).
Excellence® Celsius was developed through a breeding-based selection process and naturally carries QTLs associated with reduced alcohol production. These genetic traits redirect part of the sugar metabolism toward compounds other than ethanol, such as glycerol.
Excellence® Celsius also enhances wine freshness by producing L-malic acid during alcoholic fermentation, increasing total acidity and lowering pH. With excellent fermentation performance and rapid development in must, this Saccharomyces cerevisiae yeast supports the expression of a fresh fruit aromatic profile, combined with palate volume and vibrant tension.
