  • Fining uses agents that bind to unwanted compounds (suspended particles, excess tannins, proteins, oxidised polyphenols) and cause them to precipitate, improving clarity, stability, colour, and mouthfeel.

  • Yes, they're essential and highly recommended. Each product works by a different mechanism and reacts differently in each wine. Prepare and use trials the same way as cellar additions. Skipping them risks under- or over-fining, which can harm the wine.

  • Isinglass (Colle de Poisson L.A) is made from fish bladders. It's a great fining agent for whites and rosés to enhance clarity and brilliance, improve clarification, and remove harsh tannins.

  • Natur'Fine Prestige, made from specific yeast extracts, is a great alternative to egg whites. It refines edgy tannins, smooths mouthfeel, stabilises colour, boosts fruitiness, and removes reduction, green, or smoke aromas.

  • PVPP (polyvinylpolypyrrolidone) removes selected polyphenols. It's commonly used to reduce astringency, prevent oxidation, and prevent pinking and browning.

  • Bentonite (Bentosol Poudre or Bentosol FT) is the standard solution for protein stabilisation and heat stability management in white wines.
